Healthier banana chocolate chip bread
Preheat oven to 350 degrees F. Prepare 9x5 loaf pan by spraying cooking spray or using parchment paper, or a 12 cup muffin pan, if making muffins.
Place oats in blender or food processor and blend until it looks like flour.
In one bowl, whisk: oat flour, banking powder, baking soda and salt
In another bowl, place bananas, brown sugar, vanilla extract and melted coconut oil and mash with a fork until smooth.
Pour dry ingredients into wet and slowly mix until combined. Fold in chocolate chips.
If making as loaf bake for 33-38 minutes or if making as muffins bake for 16-18 minutes. Remove from oven when toothpick comes out clean.
Allow to cool for a few minutes before removing from pan.
Tip: It can be made vegan by swapping out the chocolate chips with vegan chocolate chips.
