Healthier banana chocolate chip bread (muffins)

I’ll be the first to admit that I have a pretty big sweet tooth. I love love love my sweets and banana bread is no exception. However, I do try to cut back on sugar if I can. That’s where this banana bread recipe comes in. It’s sweet but not too sweet, but still delicious.

Ambitious Kitchen always has delicious healthier treats and this bread is no different. It’s made with delicious oats, banana, coconut oil, brown sugar, vanilla and of course, chocolate chips. This recipe can be made into a small bread or muffins. Enjoy!

Healthier banana chocolate chip bread


Ingredients
  • 3 cups oats
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 ripe bananas
  • 1 tbsp coconut oil (melted and cooled)
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 2/3 cup chocolate chips (1/2 cup also works well)
Instructions
  1. Preheat oven to 350 degrees F. Prepare 9x5 loaf pan by spraying cooking spray or using parchment paper, or a 12 cup muffin pan, if making muffins. 

  2. Place oats in blender or food processor and blend until it looks like flour.

  3. In one bowl, whisk: oat flour, banking powder, baking soda and salt

  4. In another bowl, place bananas, brown sugar, vanilla extract and melted coconut oil and mash with a fork until smooth. 

  5. Pour dry ingredients into wet and slowly mix until combined. Fold in chocolate chips. 

  6. If making as loaf bake for 33-38 minutes or if making as muffins bake for 16-18 minutes. Remove from oven when toothpick comes out clean.

  7. Allow to cool for a few minutes before removing from pan. 

Recipe Notes

Tip: It can be made vegan by swapping out the chocolate chips with vegan chocolate chips.
